How to Make Angel Food Cake
  1. Separate egg whites and let them sit at room temperature for 30 minutes.
  2. Beat the egg whites in a large bowl with salt and cream of tartar until foamy.
  3. Gradually add sugar while continuing to beat the mixture until you achieve stiff, glossy peaks.
  4. Fold in the sifted cake flour, then mix in the vanilla and optional almond extract cautiously.
  5. Spoon the batter into an ungreased 10-inch tube pan and smooth the top.
  6. Bake at 350°F (175°C) for 35–40 minutes until golden brown.
  7. Invert the pan immediately after baking to cool upside down.
  8. Run a knife around the pan edges once cooled to release the cake.
