How to Make Angel Food Cake
- Separate egg whites and let them sit at room temperature for 30 minutes.
- Beat the egg whites in a large bowl with salt and cream of tartar until foamy.
- Gradually add sugar while continuing to beat the mixture until you achieve stiff, glossy peaks.
- Fold in the sifted cake flour, then mix in the vanilla and optional almond extract cautiously.
- Spoon the batter into an ungreased 10-inch tube pan and smooth the top.
- Bake at 350°F (175°C) for 35–40 minutes until golden brown.
- Invert the pan immediately after baking to cool upside down.
- Run a knife around the pan edges once cooled to release the cake.
