How to Make Baked Chicken Ricotta Meatballs
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Mix the ground chicken, ricotta cheese, egg, garlic, Parmesan, breadcrumbs, parsley, salt, and pepper in a large bowl.
  3. Combine gently until just mixed, avoiding overworking the mixture.
  4. Shape into approximately 1.5-inch meatballs and place on the prepared baking sheet.
  5. Brush the tops of each meatball with olive oil.
  6. Bake for 22–25 minutes, until golden and the internal temperature reaches 165°F (74°C).
  7. Optional: Broil for 2 additional minutes for extra browning.
  8. For the Sauce (Optional): In a skillet, melt butter, add minced garlic, cream, Parmesan, and herbs. Simmer and drizzle over meatballs.
