- Toss chicken cubes in a bowl with neutral oil, paprika, garlic powder, salt, and pepper until evenly coated.
- Cook the chicken in an air fryer at 400°F for 11–12 minutes or in a skillet over medium-high heat until golden.
- Combine cooked chicken with half of the Bang Bang sauce and set aside.
- Heat sesame oil in a large skillet, pour in beaten eggs seasoned with salt, and scramble gently.
- Sauté carrots, diced onion, and sliced green onions in the skillet with remaining sesame oil for about 5 minutes.
- Add minced garlic and sauté for one more minute until fragrant.
- Incorporate chilled rice into skillet, breaking clumps and stir-fry for 2–3 minutes until heated through.
- Return scrambled eggs to skillet, add melted butter, lemon juice, soy sauce, and frozen peas; stir well.
- Serve fried rice on plates, topping with Bang Bang chicken and remaining sauce, garnished with extra green onions.
