- Cook the frozen fries on a baking sheet according to package instructions, usually about 20 minutes at 425°F.
- While the fries are baking, whisk together the ingredients for your hollandaise sauce until smooth and creamy, or warm store-bought hollandaise on low heat.
- Bring water to a gentle simmer in a medium pot. Crack eggs into small bowls and gently slide them into the water, poaching for 3-4 minutes.
- Remove the crispy fries from the oven and arrange them on a large plate.
- Sprinkle cheese curds generously over the hot fries.
- Use a slotted spoon to lift poached eggs from the water and place them on top of the cheese curds.
- Gently drizzle warm hollandaise sauce over the fries, cheese, and eggs.
- Finish with salt and pepper, and serve hot.
