  • 4 cups frozen fries Choose your favorite brand for the perfect crispiness.
Cheese
  • 1 cup cheese curds Fresh cheese curds provide classic poutine texture and flavor.
Eggs
  • 4 eggs Poach gently for a perfectly runny yolk.
Sauce
  • 1 cup hollandaise sauce Homemade or store-bought hollandaise adds richness.
Seasoning
  • salt Season to taste.
  • pepper Season to taste.

Method
 

Cooking Instructions
  1. Cook the frozen fries on a baking sheet according to package instructions, usually about 20 minutes at 425°F.
  2. While the fries are baking, whisk together the ingredients for your hollandaise sauce until smooth and creamy, or warm store-bought hollandaise on low heat.
  3. Bring water to a gentle simmer in a medium pot. Crack eggs into small bowls and gently slide them into the water, poaching for 3-4 minutes.
  4. Remove the crispy fries from the oven and arrange them on a large plate.
  5. Sprinkle cheese curds generously over the hot fries.
  6. Use a slotted spoon to lift poached eggs from the water and place them on top of the cheese curds.
  7. Gently drizzle warm hollandaise sauce over the fries, cheese, and eggs.
  8. Finish with salt and pepper, and serve hot.
