Ingredients
  

For the Batter
  • 1 cup all-purpose flour whole wheat can be used for added fiber
  • 2 tbsp granulated sugar or brown sugar for richer flavor
  • 2 tbsp baking powder ensure it’s fresh for best results
  • 1/2 tsp salt balances flavors
  • 1 cup buttermilk can substitute with yogurt or milk with lemon juice
  • 1 large egg or a flax egg for vegan option
  • 2 tbsp unsalted butter (melted) can replace with coconut oil for dairy-free
For Cooking
  • 1 tbsp additional butter for greasing the skillet; oil also works

Method
 

Directions
  1. Whisk in a large bowl together the flour, sugar, baking powder, and salt until combined and fluffy.
  2. Mix in another bowl the buttermilk, egg, and melted butter until everything is well combined.
  3. Combine the wet ingredients with the dry ingredients, stirring gently until just mixed.
  4. Preheat a non-stick skillet over medium heat and add a little butter to grease the surface.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown for about 1 minute more.
  7. Serve warm, stacking the pancakes high and topping them with your favorites.
