- Boil your eggs in a pot of water for 10 minutes.
- Peel the cooled eggs gently under running water.
- Remove the yolks from the egg whites and place them into a mixing bowl.
- Mix the yolks with mayonnaise, Dijon mustard, Cajun seasoning, salt, and black pepper until smooth and creamy.
- Fill each hollowed egg white with the yolk mixture.
- Set up your breading station with flour, beaten eggs, and breadcrumbs.
- Dip each filled egg half into the flour, then into the beaten eggs, and finally coat them in breadcrumbs.
- Heat oil in a frying pan over medium heat until hot, around 350°F.
- Carefully place the breaded egg halves into the oil and fry until golden brown, about 2-3 minutes on each side.
- Drain on paper towels and serve warm.
