  • 1/2 cup mayonnaise Adds creaminess.

  • 1/4 teaspoon salt Enhances flavor.
  • 1/4 teaspoon black pepper Adds warmth.
For the Breading
  • 1 cup breadcrumbs Creates crispy exterior.
  • 1/2 cup all-purpose flour Helps with adhesion.
  • 2 large eggs (for breading) Acts as a binder.
For Frying
  • 2 cups oil Neutral oil with high smoke point.

Method
 

Cooking Instructions
  1. Boil your eggs in a pot of water for 10 minutes.
  2. Peel the cooled eggs gently under running water.
  3. Remove the yolks from the egg whites and place them into a mixing bowl.
  4. Mix the yolks with mayonnaise, Dijon mustard, Cajun seasoning, salt, and black pepper until smooth and creamy.
  5. Fill each hollowed egg white with the yolk mixture.
  6. Set up your breading station with flour, beaten eggs, and breadcrumbs.
  7. Dip each filled egg half into the flour, then into the beaten eggs, and finally coat them in breadcrumbs.
  8. Heat oil in a frying pan over medium heat until hot, around 350°F.
  9. Carefully place the breaded egg halves into the oil and fry until golden brown, about 2-3 minutes on each side.
  10. Drain on paper towels and serve warm.
