  • 1 cup Shredded cheese Blend of mozzarella and cheddar preferred
  • 4 oz Cream cheese
For the Wrapping
  • 10 pieces Spring roll wrappers Keep covered to prevent drying
For Brushing
  • 2 tbsp Olive oil
Seasoning
  • 1 tsp Salt
  • 1 tsp Pepper Freshly ground

Method
 

How to Make Cheesy Baked Vegetable Rolls
  1. Preheat your oven to 375°F (190°C).
  2. Combine the mixed vegetables, shredded cheese, cream cheese, salt, and pepper in a bowl.
  3. Lay out a spring roll wrapper flat on a clean surface.
  4. Spoon a generous helping of the vegetable mixture onto one side of the wrapper.
  5. Fold the sides over the filling and roll tightly away from you.
  6. Brush the outside of each roll with olive oil.
  7. Arrange the rolls on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes, until golden brown and crispy.
  9. Cool slightly before serving.
