  • 1 packet ranch dressing mix
  • 1 cup sour cream or Greek yogurt for a lighter version

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Combine diced potatoes and olive oil in a large bowl. Toss until every piece is well-coated.
  3. Mix in the ranch dressing mix, salt, and pepper.
  4. Spread the potatoes onto a baking sheet in an even layer. Bake for about 25 minutes.
  5. Cook the smoked sausage in a separate pan over medium heat until browned, about 5-7 minutes.
  6. Layer the cooked sausage over the potatoes as soon as you take them out of the oven.
  7. Stir in sour cream and half of the cheese, mixing gently.
  8. Top with the remaining cheese and return to the oven. Bake for an additional 10 minutes.
