- Preheat your oven to 400°F (200°C).
- Combine diced potatoes and olive oil in a large bowl. Toss until every piece is well-coated.
- Mix in the ranch dressing mix, salt, and pepper.
- Spread the potatoes onto a baking sheet in an even layer. Bake for about 25 minutes.
- Cook the smoked sausage in a separate pan over medium heat until browned, about 5-7 minutes.
- Layer the cooked sausage over the potatoes as soon as you take them out of the oven.
- Stir in sour cream and half of the cheese, mixing gently.
- Top with the remaining cheese and return to the oven. Bake for an additional 10 minutes.
