  • 2 pieces Boneless, skinless chicken breasts

For the Pasta
  • 8 oz Spaghetti or fettuccine
For the Sauce
  • 4 cloves Fresh garlic minced
  • 4 tbsp Freshly squeezed lemon juice about 1 lemon
  • 2 tbsp Capers
  • 4 tbsp Unsalted butter divided
  • 1 cup Low-sodium chicken broth

Method
 

Cooking Instructions
  1. Prepare your ingredients by mincing the garlic and measuring out the lemon juice and chicken broth.
  2. Boil the pasta in a large pot of salted boiling water according to the package instructions until al dente, usually around 8-10 minutes.
  3. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Season the chicken breasts with salt and pepper, then sear for 5-7 minutes on each side until golden brown and cooked through.
  4. In the same skillet, add the remaining butter along with the minced garlic and capers. Cook for about one minute, then add the lemon juice and chicken broth.
  5. Return the chicken to the skillet, add the drained pasta, and toss well to combine.
  6. Serve the pasta onto plates, drizzling with any remaining sauce.
