Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Sauté garlic butter in a skillet over medium heat and add the chopped mushrooms. Cook until they soften and release their juices, about 5 minutes.
  3. Season the mushrooms with salt and pepper to taste.
  4. Create a pocket in each chicken breast by slicing horizontally without cutting all the way through. Stuff the chicken breasts generously with the mushroom mixture and shredded cheese.
  5. Secure the pockets with toothpicks.
  6. Sear the stuffed chicken breasts in the same skillet with olive oil over medium-high heat for about 3-4 minutes on each side until they’re golden brown.
  7. Transfer the seared chicken to a baking dish and bake for 20-25 minutes, or until fully cooked and the cheese is melted.
  8. Optional: Drizzle with a little extra garlic butter before serving.
