Preparation
- Preheat your oven to 375°F (190°C).
- Sauté garlic butter in a skillet over medium heat and add the chopped mushrooms. Cook until they soften and release their juices, about 5 minutes.
- Season the mushrooms with salt and pepper to taste.
- Create a pocket in each chicken breast by slicing horizontally without cutting all the way through. Stuff the chicken breasts generously with the mushroom mixture and shredded cheese.
- Secure the pockets with toothpicks.
- Sear the stuffed chicken breasts in the same skillet with olive oil over medium-high heat for about 3-4 minutes on each side until they’re golden brown.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes, or until fully cooked and the cheese is melted.
- Optional: Drizzle with a little extra garlic butter before serving.
