Preparation
- Preheat your oven to 375°F (190°C).
- Sauté the mushrooms in a skillet with garlic butter until soft and fragrant (about 5-7 minutes).
- Season the mushrooms with salt and pepper.
- Make a pocket in each chicken breast using a sharp knife.
- Stuff each chicken breast with the sautéed mushroom mixture and shredded cheese.
- Secure the openings of each chicken breast with toothpicks.
- Sear the stuffed chicken breasts in heated olive oil on both sides until golden brown (about 3-4 minutes each side).
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through (internal temperature of 165°F/75°C).
