For the Chicken
  • 4 pieces Boneless chicken breasts high-quality, fresh chicken
  • 1 tsp Salt
  • 1 tsp Pepper
For the Stuffing
  • 8 oz Mushrooms cremini or button mushrooms
  • 4 tbsp Garlic butter
  • 1 cup Shredded cheese mozzarella or cheddar
For Cooking
  • 2 tbsp Olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Sauté the mushrooms in a skillet with garlic butter until soft and fragrant (about 5-7 minutes).
  3. Season the mushrooms with salt and pepper.
  4. Make a pocket in each chicken breast using a sharp knife.
  5. Stuff each chicken breast with the sautéed mushroom mixture and shredded cheese.
  6. Secure the openings of each chicken breast with toothpicks.
  7. Sear the stuffed chicken breasts in heated olive oil on both sides until golden brown (about 3-4 minutes each side).
  8. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through (internal temperature of 165°F/75°C).
