Ingredients
  

For the Pasta
  • 8 oz pasta any shape works, spaghetti or penne are wonderful choices
For the Chickpeas
  • 1 can chickpeas drained and rinsed
For the Spinach
  • 2 cups fresh spinach packed with nutrients
For the Garlic
  • 2 cloves garlic minced
For Cooking
  • 2 tablespoons olive oil for sautéing
  • salt to taste
  • pepper to taste
For Serving
  • Parmesan cheese optional, for garnish

Method
 

Cooking Steps
  1. Fill a large pot with water and bring it to a rolling boil. Add pasta and cook according to package instructions, about 8-10 minutes, until al dente.
  2. Drizzle 2 tablespoons of olive oil into a skillet and heat over medium heat for 1-2 minutes.
  3. Add minced garlic to the skillet, cooking for about 1 minute until fragrant.
  4. Toss in drained chickpeas and cook for 3-4 minutes.
  5. Add fresh spinach, stirring until wilted, about 2-3 minutes.
  6. Drain pasta, add to skillet, and mix well.
  7. Season with salt and pepper to taste.
  8. Serve on plates and optionally garnish with Parmesan cheese.
