How to Make Cottage Cheese Flatbread
  1. In a bowl, mix together the flour, baking powder, and a pinch of salt.
  2. Stir in the Greek yogurt until a sticky dough forms.
  3. Gently knead on a lightly floured surface for 2–3 minutes until smooth.
  4. Divide the dough into two equal portions and roll into ovals about 1/4-inch thick.
  5. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  6. Bake the plain flatbreads for 6–8 minutes until puffed and slightly golden.
  7. Remove from the oven and spread whipped cottage cheese on each flatbread.
  8. Drizzle with olive oil and sprinkle with your choice of herbs and optional spices.
  9. Return to the oven and bake for another 5–7 minutes until bubbly and crisp at the edges.
  10. Let cool slightly before slicing and serving warm.
