How to Make Cottage Cheese Flatbread
- In a bowl, mix together the flour, baking powder, and a pinch of salt.
- Stir in the Greek yogurt until a sticky dough forms.
- Gently knead on a lightly floured surface for 2–3 minutes until smooth.
- Divide the dough into two equal portions and roll into ovals about 1/4-inch thick.
- Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Bake the plain flatbreads for 6–8 minutes until puffed and slightly golden.
- Remove from the oven and spread whipped cottage cheese on each flatbread.
- Drizzle with olive oil and sprinkle with your choice of herbs and optional spices.
- Return to the oven and bake for another 5–7 minutes until bubbly and crisp at the edges.
- Let cool slightly before slicing and serving warm.
