How to Make Cottage Cheese Flatbread
- Combine ingredients: In a bowl, mix together the flour, baking powder, and a pinch of salt.
- Add yogurt: Stir in the Greek yogurt until a sticky dough forms.
- Knead the dough: Gently knead on a lightly floured surface for 2–3 minutes until smooth.
- Divide and roll: Divide the dough into two equal portions. Roll each portion into ovals about 1/4-inch thick.
- Preheat oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Bake initial flatbreads: Bake the plain flatbreads for 6–8 minutes until puffed and slightly golden.
- Spread cottage cheese: Remove from the oven and spread whipped cottage cheese on each flatbread.
- Drizzle and season: Drizzle with olive oil and sprinkle with your choice of herbs and optional spices.
- Bake again: Return to the oven and bake for another 5–7 minutes until bubbly and crisp at the edges.
