  • 8 ounces pasta cook until al dente
  • 1 cup cherry tomatoes halved
  • 1 cup cucumbers diced
  • 1/2 cup red onion diced
For the Dressing
  • 1/2 cup mayonnaise creamy base
  • 1/4 cup sour cream extra tanginess
  • 1 juice of 1 lemon for bright flavor
  • 1 teaspoon garlic powder aromatic warmth
  • salt and pepper to taste
For the Topping
  • 1/2 cup parmesan cheese grated

Method
 

Preparation
  1. Cook the pasta according to the package instructions, ensuring it’s perfectly al dente. Drain and let it cool for a few minutes.
  2. Combine in a large bowl the cooled pasta, halved cherry tomatoes, diced cucumbers, and red onion. Toss gently to mix.
  3. Mix in a separate bowl the mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper until well-blended.
  4. Add the dressing to the pasta mixture and toss until well coated.
  5. Fold in the grated parmesan cheese gently.
  6. Chill in the refrigerator for at least 30 minutes before serving. Garnish with additional parmesan or herbs if desired.
