Ingredients
  

For the Chicken
  • 4 pieces Chicken breasts boneless and skinless
  • 1 tsp Salt adjust based on preference
  • 1 tsp Black pepper freshly ground is best
For the Sauce
  • 1 cup Greek yogurt can substitute with sour cream
  • 1 cup Chicken broth vegetable broth can be used
  • 2 tbsp Lemon juice freshly squeezed is ideal
For the Veggies
  • 4 cups Spinach fresh, can be replaced with kale
  • 8 oz Mushrooms sliced, button or cremini
  • 2 cloves Garlic minced

Method
 

Cooking Steps
  1. In a skillet over medium heat, warm the olive oil until it shimmers.
  2. Add the minced garlic into the skillet and sauté for about 1 minute.
  3. Gently place the chicken breasts in the skillet, cooking until browned on both sides.
  4. Stir in the sliced mushrooms, cooking until softened and begin to release their juices.
  5. Toss in the fresh spinach, cooking until it wilts down.
  6. Reduce the heat and stir in the Greek yogurt, chicken broth, and lemon juice.
  7. Sprinkle salt and black pepper into the mixture, stirring well.
  8. Allow everything to simmer together for an additional 5 minutes on low heat.
  9. Carefully plate your Creamy Spinach & Mushroom Chicken and serve warm.
