  • 4 pieces Chicken breasts boneless and skinless
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper freshly ground, to taste
For the Sauce
  • 1 cup Greek yogurt can substitute with sour cream
  • 1 cup Chicken broth or vegetable broth for a lighter option
  • 2 tablespoons Lemon juice freshly squeezed
For the Veggies
  • 3 cups Spinach fresh, can replace with kale
  • 8 ounces Mushrooms sliced, button or cremini
  • 2 cloves Garlic minced

Method
 

Cooking Steps
  1. Heat the olive oil in a skillet over medium heat until it shimmers.
  2. Add the minced garlic into the skillet and sauté for about 1 minute.
  3. Gently place the chicken breasts in the skillet and cook until browned, about 5-7 minutes each side.
  4. Stir in the sliced mushrooms and cook until softened, about 4-5 minutes.
  5. Add the fresh spinach, cooking until it wilts, about 2-3 minutes.
  6. Reduce heat and stir in the Greek yogurt, chicken broth, and lemon juice.
  7. Sprinkle salt and black pepper into the mixture and stir well.
  8. Allow everything to simmer for an additional 5 minutes on low heat.
  9. Plate the Creamy Spinach & Mushroom Chicken and serve warm.
