- Carefully place the chicken breasts in the skillet. Cook for about 6-7 minutes on each side until they are nicely browned and cooked through, with an internal temperature of 165°F.
- Toss in the sliced mushrooms and cook for another 3-4 minutes until they are softened and have released their moisture, adding a delightful earthy taste to the dish.
- Stir in the fresh spinach and cook until wilted and vibrant, which should take around 2-3 minutes.
- Reduce the heat to low. Mix in the Greek yogurt, chicken broth, and lemon juice, stirring until everything is well combined and creamy.
- Sprinkle in salt and black pepper to season the sauce. Taste and adjust the seasoning to your preference, ensuring it’s just right.
- Let everything simmer together for an additional 5 minutes. This allows the flavors to meld beautifully.
