  • 3 cloves Garlic Fresh minced

  • 2 large Eggs Scrambled
For the Vegetables
  • 2 cups Mixed vegetables Thawed, any frozen blend works
For the Sauce
  • 2 tablespoons Soy sauce Low-sodium if preferred
  • 1 teaspoon Sesame oil A few drops go a long way
For Cooking
  • 2 tablespoons Vegetable oil For frying

For Garnish
  • 2 stalks Green onions Sliced

Cooking Steps
  1. Pour vegetable oil into a large pan and place over medium heat until shimmering.
  2. Add minced garlic to the hot oil and sauté gently for about 1-2 minutes until golden brown.
  3. Add the diced chicken to the pan and cook for 5-7 minutes until no longer pink and slightly crispy.
  4. Push chicken to one side, crack eggs into the empty side, and scramble for 2-3 minutes.
  5. Add cooked rice and mixed vegetables, stir gently to combine, heating through for 2-3 minutes.
  6. Pour in soy sauce and sesame oil, stirring vigorously for 1-2 minutes.
  7. Sprinkle with salt and pepper to taste, and stir to ensure seasoning is evenly distributed.
  8. Spoon into serving dishes, garnishing with sliced green onions.
