Cooking Steps
  1. Pour vegetable oil into a large pan and place over medium heat. Allow it to warm up until shimmering.
  2. Add minced garlic to the hot oil and sauté gently for about 1-2 minutes, until it turns golden brown.
  3. Add diced chicken to the pan and cook for 5-7 minutes, stirring occasionally, until no longer pink.
  4. Push chicken to one side, crack the eggs into the empty side, and scramble for 2-3 minutes until fluffy.
  5. Add the cooked rice and mixed vegetables, stir gently for about 2-3 minutes until heated through.
  6. Pour in soy sauce and sesame oil, stir vigorously for 1-2 minutes to meld flavors.
  7. Sprinkle salt and pepper to taste, stir to combine.
  8. Spoon into serving dishes, garnishing generously with sliced green onions.
