For the Chicken
  • 2 pounds Boneless, skinless chicken breasts
For the Sauce
  • 1 cup Marsala wine dry variety preferred
  • 1 cup Chicken broth low-sodium
For the Vegetables
  • 8 ounces Mushrooms (sliced) fresh recommended
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
For Seasoning
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried thyme
  • Salt and pepper to taste
For Garnish
  • 2 tablespoons Fresh parsley chopped

Method
 

Preparation Steps
  1. Heat olive oil in a skillet over medium heat.
  2. Brown the chicken breasts on both sides, seasoning with salt and pepper.
  3. Transfer browned chicken to the crockpot.
  4. Add sliced mushrooms, chopped onion, minced garlic, thyme, Marsala wine, and chicken broth to the crockpot. Stir gently.
  5. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  6. Remove chicken from the crockpot to thicken sauce if desired.
  7. Serve chicken with sauce on top, garnished with fresh parsley.
