  • 1 can (28 oz) diced tomatoes fire-roasted varieties for added smokiness
  • 1 medium onion yellow onions are preferred
  • 2 cloves garlic adjust based on preference
  • 2 tablespoons chili powder the star seasoning
  • 1 teaspoon cumin adds warmth and earthiness
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 cup beef broth can use vegetable broth for vegetarian version

How to Make Crockpot Chili
  1. Brown the ground beef in a skillet over medium heat for 5-7 minutes until browned. Drain excess fat if necessary.
  2. Add chopped onion and minced garlic to the skillet, cooking until softened and fragrant for 3-4 minutes.
  3. Transfer the meat mixture to your crockpot, scraping the skillet to get all the browned bits.
  4. Incorporate the kidney beans, black beans, diced tomatoes, chili powder, cumin, salt, black pepper, and beef broth. Stir until combined.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chili is thick and flavors meld.
  6. Serve hot, garnished with your choice of toppings like shredded cheese, sour cream, or fresh cilantro.
