Ingredients
  

For the Chicken
  • 2 pounds Boneless, skinless chicken breasts
  • to taste Salt
  • to taste Pepper
For the Seasoning
  • 4 cloves Fresh garlic, minced
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 2 juices Juice of limes
For the Vegetables
  • 1 medium Onion, diced
  • 1 each Red bell pepper, diced
  • 1 each Green bell pepper, diced
For the Base
  • 14.5 ounces Diced tomatoes can

Method
 

Preparation Steps
  1. Rinse and pat dry the chicken breasts to ensure they cook evenly and absorb all those vibrant flavors.
  2. Place the chicken breasts at the bottom of your crockpot. Season generously with salt, pepper, chili powder, cumin, and minced garlic.
  3. Scatter the diced bell peppers and onions over the seasoned chicken.
  4. Open the can of diced tomatoes and pour them, along with their juices, over the chicken and veggies.
  5. Squeeze the juice of two limes over everything in the crockpot.
  6. Cover your crockpot and set it to cook on low for 6 hours or high for 3 hours.
  7. Once finished, use two forks to shred the chicken right in the pot, mixing everything together.
