- Rinse and pat dry the chicken breasts to ensure they cook evenly and absorb all those vibrant flavors.
- Place the chicken breasts at the bottom of your crockpot. Season generously with salt, pepper, chili powder, cumin, and minced garlic.
- Scatter the diced bell peppers and onions over the seasoned chicken.
- Open the can of diced tomatoes and pour them, along with their juices, over the chicken and veggies.
- Squeeze the juice of two limes over everything in the crockpot.
- Cover your crockpot and set it to cook on low for 6 hours or high for 3 hours.
- Once finished, use two forks to shred the chicken right in the pot, mixing everything together.
