Main Steps
- In a large bowl, add 6 cups of Rice Chex cereal.
- In a microwave-safe bowl, combine 1 cup of white chocolate chips and 1/2 cup of peanut butter. Microwave in 30-second intervals until melted.
- Stir in 1/4 cup of molasses, 1 teaspoon of ground ginger, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of nutmeg.
- Pour the warm melted mixture over the Rice Chex, gently stirring until coated.
- Transfer the mixture to a large zip-top bag or bowl. Add 1 cup of powdered sugar and 1/2 cup of crushed gingerbread cookies. Seal and shake until coated.
- Spread on a baking sheet to cool completely.
