- Combine marinade: In a bowl or zip-top bag, mix the olive oil, lemon juice, minced garlic, oregano, and salt. Add the chicken breasts and let them marinate in the fridge for 30 minutes to 8 hours for maximum flavor.
- Preheat grill: Heat your grill or grill pan to medium-high. Cook the chicken for 5–6 minutes on each side or until its internal temperature reaches 165°F (74°C). Allow it to rest for 5 minutes before slicing.
- Prepare tzatziki: In a small bowl, combine Greek yogurt, grated cucumber (squeeze out excess water), minced garlic, lemon juice, dill, salt, and a drizzle of olive oil. Mix well and chill until ready to serve.
- Assemble salad: In serving bowls, lay down a base of romaine lettuce or mixed greens. Add cucumber slices, cherry tomatoes, sliced red onion, and Kalamata olives before topping with the sliced grilled chicken.
- Finish and serve: Add a large spoonful of the chilled tzatziki on top. If desired, drizzle with more olive oil and lemon juice. Garnish with chopped parsley or dill and serve immediately.
