Ingredients
  

For the Chicken Marinade
  • 2 pieces Boneless skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 2 cloves Garlic cloves minced
  • 1 teaspoon Dried oregano
For the Salad
  • 4 cups Romaine lettuce chopped
  • 2 cups Kale chopped
  • 1 cup Cucumber diced
  • 1 small Red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 1/2 cup Feta cheese crumbled
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cup Grated cucumber squeezed to remove moisture
  • 1 tablespoon Lemon juice
  • 1 clove Garlic clove minced
  • 1 tablespoon Fresh dill chopped
  • 1 pinch Salt
For Garnish
  • 1 piece Lemon wedges optional
  • 1 tablespoon Fresh dill for garnish

Method
 

Preparation
  1. Whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper in a bowl. Let the chicken soak for at least 20 minutes.
  2. Grill the marinated chicken over medium-high heat for 5–6 minutes on each side until cooked through. Let it rest before slicing.
  3. Combine Greek yogurt, grated cucumber, lemon juice, minced garlic, fresh dill, and a pinch of salt in a bowl. Chill in the refrigerator.
  4. Toss together chopped romaine, kale, diced cucumber, sliced red onion, olives, and crumbled feta cheese in a large bowl.
  5. Divide the salad mix into bowls, topping each with grilled chicken and tzatziki.
  6. Garnish with fresh dill and lemon wedges. Serve immediately or refrigerate components separately.
