Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl.
- Spread the sweet potatoes on the baking sheet and roast for 25-30 minutes, flipping halfway through.
- Season the chicken breasts with the remaining smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook for 5-6 minutes per side until golden brown.
- Cook the brown rice according to package directions.
- Assemble your bowls by adding rice, topping with roasted sweet potatoes and sliced chicken, then drizzling with sauce and garnishing with parsley.
