Ingredients
  

For the Chicken
  • 2 lbs Chicken breasts can substitute with turkey
  • 1 tbsp Smoked paprika
  • 1 tsp Garlic powder fresh garlic can be used for a stronger flavor
  • 1 tsp Salt adjust according to dietary needs
  • 1/2 tsp Black pepper
For the Sweet Potatoes
  • 2 medium Sweet potatoes diced
  • 1 tbsp Olive oil can substitute with avocado oil
For the Rice
  • 2 cups Brown rice or quinoa for a gluten-free option
For Garnishing
  • 1/4 cup Chopped fresh parsley
  • 1 cup Creamy dressing or tahini sauce or yogurt as an alternative

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl.
  3. Spread the sweet potatoes on the baking sheet and roast for 25-30 minutes, flipping halfway through.
  4. Season the chicken breasts with the remaining smoked paprika, garlic powder, salt, and pepper.
  5. Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook for 5-6 minutes per side until golden brown.
  6. Cook the brown rice according to package directions.
  7. Assemble your bowls by adding rice, topping with roasted sweet potatoes and sliced chicken, then drizzling with sauce and garnishing with parsley.
