  • 1/4 cup Chopped walnuts
  • 1/4 cup Pumpkin seeds
  • 1/4 cup Sunflower seeds
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flax seeds
For the Sweet Finish
  • 1/2 cup Dried cranberries or raisins

How to Make Healthy Nut & Seed Energy Cookies
  1. Mash the bananas in a large bowl until they’re smooth and creamy.
  2. Stir in the maple syrup, vanilla extract, and nut butter until you have a creamy mixture.
  3. Add the rolled oats, cinnamon, and a pinch of salt. Stir until well combined.
  4. Fold in the chopped almonds, pecans, walnuts, pumpkin seeds, sunflower seeds, chia seeds, flax seeds, and dried cranberries or raisins.
  5. Scoop heaping tablespoons of dough onto a parchment-lined baking sheet and shape them into thick disks.
  6. Bake at 350°F (175°C) for 15-18 minutes, or until edges are golden brown.
  7. Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
  8. Store in an airtight container at room temperature for 3-4 days, or refrigerate for up to 1 week.
