Ingredients
  

For the Chicken & Broth
  • 1 pound Chicken breast diced
  • 4 cups Chicken broth low-sodium recommended
For the Vegetables
  • 2 medium Carrots sliced
  • 4 cups Spinach fresh
For the Pasta & Flavor
  • 20 ounces Tortellini any favorite variety
  • 1 can Diced tomatoes canned
  • 2 teaspoons Italian seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Instructions
  1. Combine the diced chicken breast, diced tomatoes, chicken broth, sliced carrots, and Italian seasoning in the CrockPot. Mix well to incorporate all the flavors.
  2. Sprinkle in salt and pepper to taste, stirring again to ensure the seasoning is evenly distributed.
  3. Cover the CrockPot and cook on low for about 4 hours.
  4. After 4 hours, gently add the tortellini and fresh spinach to the pot. Stir them in to combine.
  5. Continue to cook on low for an additional 30 minutes.
