Ingredients

Pasta
  • 12 oz Rotini or Penne Pasta your favorite pasta
Vegetables
  • 1 cup Cherry Tomatoes halved
  • 1 Cucumber diced
  • 1 Bell Pepper chopped
  • 1/2 cup Black Olives sliced
Dressing
  • 1/2 cup Italian Dressing homemade or store-bought
Topping
  • 1/2 cup Parmesan Cheese freshly grated

Equipment

  • large pot
  • Mixing bowl
  • knife
  • cutting board

Method

Preparation Steps
  1. Cook the Pasta: Begin by boiling water in a large pot. Add the rotini or penne pasta and cook according to the package instructions until al dente, which typically takes about 8-10 minutes. Drain the pasta and rinse it under cold water to halt the cooking process.
  2. Chop the Veggies: While the pasta is cooling, take the time to chop your cherry tomatoes, cucumber, and bell pepper into small, bite-sized pieces.
  3. Combine Ingredients: In a large mixing bowl, combine the cooled pasta, chopped tomatoes, diced cucumber, chopped bell pepper, and sliced black olives. Toss gently.
  4. Add Dressing and Cheese: Drizzle the Italian dressing over the pasta and veggies. Then, add the freshly grated Parmesan cheese on top. Toss again until all the ingredients are beautifully coated.
  5. Chill Before Serving: Cover the bowl and place it in the refrigerator to chill for at least an hour.
