Preparation
  1. Whisk together the marinade by combining olive oil, lemon juice, lemon zest, minced garlic, dill, red pepper flakes (if using), salt, and black pepper in a bowl until well blended.
  2. Toss the shrimp in the marinade, ensuring they're evenly coated, and let them rest for 15 minutes.
  3. Preheat the oven to 425°F (220°C).
  4. Spread the shrimp evenly on a parchment-lined baking sheet, and roast them for 7–9 minutes until they turn pink and opaque.
  5. Cook the orzo as per package directions in a pot of salted boiling water.
  6. Drain the orzo and drizzle with a touch of olive oil.
  7. Mix the warm orzo with crumbled feta, lemon zest, and freshly chopped parsley.
  8. Top the orzo with the roasted shrimp.
  9. Garnish with extra dill and serve hot with lemon wedges.
