Preparation
- Preheat your oven to 350°F (175°C).
- Grease a baking pan and line it with parchment paper.
- Melt the dark chocolate and butter together in a bowl over simmering water until smooth.
- Remove from heat and stir in the sugar until glossy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the flour and vanilla extract until just combined.
- Fold in the crushed Lotus Biscoff cookies.
- Pour the batter into the prepared pan and spread it evenly.
- Drop spoonfuls of Biscoff spread on top and swirl with a knife.
- Bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
- Let cool completely before cutting into squares.
