  • 16 oz gnocchi fresh or store-bought
For the Vegetables
  • 2 tablespoons olive oil for sautéing
  • 1 cup cherry tomatoes halved
  • 1 piece bell pepper diced
  • 1 piece zucchini sliced
For the Flavor
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste
For Garnish
  • fresh basil for garnish

Method
 

How to Make One-Pan Gnocchi
  1. Pour 2 tablespoons of olive oil into a large skillet and set it over medium heat.
  2. Toss in 1 cup of halved cherry tomatoes, 1 diced bell pepper, and 1 sliced zucchini. Cook for 5-7 minutes until softened.
  3. Sprinkle 2 minced garlic cloves and 1 teaspoon of Italian seasoning into the skillet. Stir for about 1 minute.
  4. Introduce 16 oz of gnocchi and pour in 1 cup of water. Stir gently to combine.
  5. Cover the skillet and let it cook for 5-8 minutes until gnocchi is tender.
  6. Remove the lid and season with salt and pepper to taste. Stir well.
  7. Garnish with fresh basil leaves before serving.
