How to Make One-Pan Gnocchi
- Pour 2 tablespoons of olive oil into a large skillet and set it over medium heat.
- Toss in 1 cup of halved cherry tomatoes, 1 diced bell pepper, and 1 sliced zucchini. Cook for 5-7 minutes until softened.
- Sprinkle 2 minced garlic cloves and 1 teaspoon of Italian seasoning into the skillet. Stir for about 1 minute.
- Introduce 16 oz of gnocchi and pour in 1 cup of water. Stir gently to combine.
- Cover the skillet and let it cook for 5-8 minutes until gnocchi is tender.
- Remove the lid and season with salt and pepper to taste. Stir well.
- Garnish with fresh basil leaves before serving.
