How to Make One-Pan Gnocchi
  1. Pour 2 tablespoons of olive oil into a large skillet and set it over medium heat.
  2. Toss in 1 cup of halved cherry tomatoes, 1 diced bell pepper, and 1 sliced zucchini. Cook for 5-7 minutes until softened.
  3. Add 2 minced garlic cloves and 1 teaspoon of Italian seasoning, and stir for about 1 minute.
  4. Introduce 16 oz of gnocchi and 1 cup of water, stirring gently to combine.
  5. Cover the skillet and cook for 5-8 minutes until the gnocchi are tender.
  6. Remove the lid and season with salt and pepper to taste, stirring well.
  7. Garnish with fresh basil before serving.
