How to Make Pineapple Bread
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
- Fold in the crushed pineapple and its juice.
- Gradually combine the dry ingredients into the wet ingredients until just mixed.
- Pour the batter into the prepared loaf pan and top with pineapple chunks if desired.
- Bake for 50–60 minutes, until a toothpick inserted comes out clean.
- Let the bread cool in the pan for 10–15 minutes before transferring to a wire rack.
