How to Make Pineapple Bread
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
  5. Fold in the crushed pineapple and its juice.
  6. Gradually combine the dry ingredients into the wet ingredients until just mixed.
  7. Pour the batter into the prepared loaf pan and top with pineapple chunks if desired.
  8. Bake for 50–60 minutes, until a toothpick inserted comes out clean.
  9. Let the bread cool in the pan for 10–15 minutes before transferring to a wire rack.
