Cupcake Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Whisk together the dry ingredients: flour, cocoa powder, baking soda, and a pinch of salt.
- Blend the wet ingredients: vegetable oil, granulated sugar, eggs, buttermilk, red food coloring, vinegar, and vanilla.
- Combine the dry ingredients into the wet mixture gradually; stir until just combined.
- Fill each cupcake liner two-thirds full with batter. Bake for 20-22 minutes.
- Cool completely before frosting. To make the cream cheese frosting, beat cream cheese and butter until smooth, then gradually mix in powdered sugar and vanilla.
- Optionally, sprinkle cocoa powder on top of the frosting.
