  • 2 large eggs
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

Cupcake Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the dry ingredients: flour, cocoa powder, baking soda, and a pinch of salt.
  3. Blend the wet ingredients: vegetable oil, granulated sugar, eggs, buttermilk, red food coloring, vinegar, and vanilla.
  4. Combine the dry ingredients into the wet mixture gradually; stir until just combined.
  5. Fill each cupcake liner two-thirds full with batter. Bake for 20-22 minutes.
  6. Cool completely before frosting. To make the cream cheese frosting, beat cream cheese and butter until smooth, then gradually mix in powdered sugar and vanilla.
  7. Optionally, sprinkle cocoa powder on top of the frosting.
