Method
 

Preparation
  1. Preheat your oven to 300°F (150°C) and line your baking sheets with parchment paper.
  2. Whisk together the almond flour, powdered sugar, cocoa powder, and a pinch of salt until well combined.
  3. Whip the egg whites in a separate bowl until foamy, then gradually add in granulated sugar until stiff peaks form.
  4. Fold the dry mixture gently into the whipped egg whites and add the red gel food coloring until desired shade is reached.
  5. Pipe small circles onto the prepared baking sheets and tap each sheet gently on the counter.
  6. Bake in the preheated oven for 15-20 minutes, or until the shells are firm. Allow cooling completely before filling.
  7. Optional: Dust with cocoa powder for an elegant finish before serving.
