  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or vegetable oil
For Cooking
  • 1 tablespoon butter or oil for greasing the skillet
For Serving
  • to taste fresh berries or maple syrup optional toppings

Method
 

Directions
  1. In a bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
  2. In another bowl, combine the ricotta cheese, eggs, milk, vanilla extract, and melted butter. Stir until smooth.
  3. Fold the wet ingredients into the dry ingredients until just mixed.
  4. Preheat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  5. Pour small amounts of batter onto the skillet, leaving space for spreading.
  6. Cook for 2–3 minutes until bubbles form, then flip and cook for another 2 minutes.
  7. Serve warm with fresh berries or maple syrup.
