For the Sauce
  • 1/4 cup Low-sodium soy sauce
  • 1 tablespoon Light brown sugar
  • 1 tablespoon Minced fresh ginger
  • 2 cloves Minced fresh garlic
  • 1 teaspoon Sambal oelek adjust to taste
  • 1 tablespoon Toasted sesame oil
For the Noodles
  • 2 packs Instant ramen noodles
For the Vegetables
  • 1 bunch Broccolini roasted
  • spray Avocado oil spray for roasting
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Kosher salt to taste
For the Toppings
  • 1 pound Ground pork
  • 1/2 cup Cashews chopped
  • 2 stalks Green onions sliced

Method
 

Recipe Steps
  1. Preheat your oven to 400°F (200°C) for roasting the broccolini.
  2. Lightly spray the broccolini with avocado oil spray and roast for about 10 minutes.
  3. Heat the avocado oil in a large pan over medium heat, add the ground pork and cook for 5-7 minutes until browned.
  4. Stir in the minced ginger, garlic, sambal oelek, and soy sauce, and cook for an additional 2-3 minutes.
  5. Mix in the light brown sugar until it dissolves.
  6. Add garlic powder, kosher salt, and cooked ramen noodles and toss together for 1-2 minutes.
  7. Plate the noodles and top with roasted broccolini, cashews, and sliced green onions.
