How to Make Slow Cooker Lentil Sweet Potato Chili
  1. Rinse the lentils thoroughly and then set them aside.
  2. Combine the sweet potatoes, onion, garlic, bell pepper, and lentils in your slow cooker.
  3. Pour in the diced tomatoes along with the vegetable broth.
  4. Add the chili powder, cumin, salt, and pepper to the pot.
  5. Stir gently to combine all ingredients uniformly.
  6. Cover and cook the chili on low for 6-8 hours or on high for 3-4 hours.
  7. Check the seasoning before serving.
