Method
 

Preparation
  1. In a small bowl, combine the mayonnaise, chipotle peppers, and lime juice. Stir until well blended.
  2. Toast English muffins until golden brown.
  3. Heat butter or oil in a skillet over medium heat. Fry the eggs to desired doneness.
  4. Place cheddar cheese on top of the eggs to melt.
  5. Spread chipotle mayonnaise on each toasted muffin. Layer in fried eggs and bacon or avocado.
  6. Top with other muffin half and serve immediately.
