Chipotle Mayo
  • 1 cup mayonnaise
  • 2 tablespoons canned chipotle peppers in adobo sauce
  • 1 tablespoon fresh lime juice
Sandwich
  • 2 pieces English muffins
  • 4 large large eggs
  • 4 slices sharp cheddar cheese
  • 4 slices cooked bacon or sausage optional
For Cooking
  • 2 tablespoons butter or oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Toppings
  • 1 cup avocado slices or baby spinach

Method
 

Instructions
  1. In a small bowl, whisk together the mayonnaise, chipotle peppers, and lime juice until smooth and well combined.
  2. Toast the English muffins in a toaster or under a broiler until they are golden brown.
  3. In a skillet over medium heat, melt the butter or oil until hot.
  4. Crack the large eggs into the skillet and cook to your desired level of doneness.
  5. During the last minute of cooking, place sharp cheddar cheese on top of the eggs to melt.
  6. Spread chipotle mayo on each toasted English muffin half, layer on the fried eggs and any additional toppings.
  7. Press down the other half of the muffin to close the sandwich and serve immediately.
