- In a small bowl, whisk together the mayonnaise, chipotle peppers, and lime juice until smooth and well combined.
- Toast the English muffins in a toaster or under a broiler until they are golden brown.
- In a skillet over medium heat, melt the butter or oil until hot.
- Crack the large eggs into the skillet and cook to your desired level of doneness.
- During the last minute of cooking, place sharp cheddar cheese on top of the eggs to melt.
- Spread chipotle mayo on each toasted English muffin half, layer on the fried eggs and any additional toppings.
- Press down the other half of the muffin to close the sandwich and serve immediately.
