Sandwich
  • 2 medium English muffins split and toasted
  • 4 large eggs fried
  • 1 cup sharp cheddar cheese shredded
  • 4 slices cooked bacon or sausage optional

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 medium avocado sliced
  • 1 cup baby spinach

Method
 

Preparation
  1. In a small bowl, whisk together the mayonnaise, chipotle peppers, and lime juice until smooth and well combined.
  2. Toast the English muffins in a toaster or under a broiler until they are golden brown.
  3. In a skillet over medium heat, melt the butter or oil.
  4. Crack the large eggs into the skillet, cooking them until they reach your desired level of doneness.
  5. During the last minute of cooking the eggs, place the sharp cheddar cheese on top so it can melt.
  6. Spread a generous amount of the chipotle mayo on each toasted English muffin half. Layer on the fried eggs and toppings.
  7. Gently press down the other half of the English muffin onto the fillings to close the sandwiches. Serve immediately.
