  • 1 pound Sirloin steak cut into bite-sized pieces
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper freshly cracked
For the Sweet Potatoes
  • 2 medium Sweet potatoes diced
  • 2 tablespoons Olive oil for roasting
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika smoked paprika recommended
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
For Garnish
  • 2 tablespoons Fresh parsley chopped

Method
 

Preparing the Dish
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss well until all pieces are evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, stirring halfway through.
  4. While the sweet potatoes roast, season the sirloin steak bites generously with salt and pepper.
  5. Heat a skillet over medium-high heat and add a splash of olive oil. Add the steak bites, cooking for 3-4 minutes until they are browned.
  6. Remove the skillet from heat and let the steak bites rest for a few minutes.
  7. Plate the steak bites alongside the roasted sweet potatoes and garnish with fresh parsley.
