  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar in a mixing bowl until fluffy and light.
  3. Mix in the large egg and vanilla extract until smooth.
  4. Whisk together the all-purpose flour and baking powder in another bowl, then gradually add to the wet ingredients.
  5. Fold in the chopped strawberries gently.
  6. Scoop spoonfuls of dough onto the prepared baking sheets and bake for 10-12 minutes.
