- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together the flour, baking powder, and salt in a mixing bowl.
- In a separate bowl, cream the softened butter and sugar until light and fluffy. Add the egg and vanilla extract; mix until smooth.
- Combine the dry ingredients into the wet mixture gradually, stirring until just combined. Gently fold in the chopped strawberries.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart. Flatten each slightly.
- Bake for 12-15 minutes, or until the edges are lightly golden. Allow to cool on the baking sheets for five minutes before transferring to wire racks.
- Serve topped with whipped cream if desired.
