Preparation
- Rinse and pat dry the chicken breasts. Season generously with salt and pepper.
- In a medium bowl, combine the soy sauce, sweet chili sauce, honey, minced garlic, and fresh lime juice. Whisk until smooth.
- Place the seasoned chicken breasts in a dish or bag, pour half of the sauce over them, and marinate for at least 30 minutes.
- Preheat your oven to 400°F (200°C). Heat the olive oil in a skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the internal temperature reaches at least 165°F (75°C).
- Let the chicken rest for a few minutes, then serve drizzled with the remaining sweet chili sauce.
