How to Make Sweet Cinnamon Sugar Roasted Chickpeas
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Drain and rinse the chickpeas under cold water; pat them dry.
- In a mixing bowl, combine the chickpeas and olive oil, tossing until coated.
- Spread the chickpeas on the baking sheet in a single layer and roast for 25–30 minutes, shaking every 10 minutes.
- Toss the hot chickpeas with brown sugar, ground cinnamon, vanilla extract, and salt until evenly coated.
- Let cool completely, then transfer to an airtight container for storage.
