Ingredients
  

For the Salad
  • 1 can chickpeas Rinsed and drained
  • 1 can black beans Rinsed and drained
  • 1 can kidney beans Rinsed and drained
  • 1 cup bell peppers Chopped
  • 1 cup red onion Chopped
  • 1/4 cup fresh parsley Chopped
For the Dressing
  • 1/4 cup olive oil
  • 1 lemon juice Freshly squeezed
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. In a large mixing bowl, gently combine the chickpeas, black beans, and kidney beans.
  2. Toss in the chopped bell peppers, red onion, and parsley.
  3. In a separate small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the bean and veggie mixture, then toss until everything is well coated.
  5. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving.

Notes

For enhanced flavor, rinse and drain canned beans thoroughly. For a milder onion, soak in cold water for a few minutes. Garnish with extra parsley if desired.
