Ingredients
  

For the Salad
  • 1 can chickpeas rinsed and drained
  • 1 can black beans rinsed and drained
  • 1 can kidney beans rinsed and drained
  • 1 cup chopped bell peppers variety of colors
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper

Method
 

Instructions
  1. In a large bowl, mix together the rinsed chickpeas, black beans, and kidney beans.
  2. Gently fold in the chopped bell peppers, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Drizzle the dressing over the bean mixture and toss everything to coat thoroughly.
  5. Cover the salad and chill in the refrigerator for at least 30 minutes before serving.
